Yummy easy to make dish! |
Don's Vegetarian Mexican Pasta
Ingredients:
- 2 Large Ears Of Corn (cut corn from the cob)
- 1 Box Rotini Corkscrew pasta
- 1 – 15 oz can Tomato Sauce
- 1 – 15 oz can Diced Tomatoes
- 8 oz Jar of Taco Sauce (more if desired)
- 2 pkgs Morningstar Burger Crumbles
- 2 Cups of Grated Sharp Cheddar cheese
Directions:
- Cook pasta as directed on box and set aside.
- Combine corn, tomato sauce, diced tomatoes, crumbles and taco sauce into skillet and cook until thoroughly heated.
- In a large 9x13 deep glass baking dish (may want to coat with cooking spray), spread half the cooked mixture from step 2 on the bottom of the glass baking dish evenly. Then add the pasta on top of that and spread evenly.
- Add the remaining mixture from step 2 on top of the pasta and spread evenly.
- Spread the cheese on the top.
- Cover the baking dish with foil and bake for 25 minutes at 400 degrees. In the last 5 minutes, remove the tinfoil. Let the dish set for a few minutes before serving.
