Don's Vegetarian Mexican Pasta

Yummy easy to make dish!
Here's a yummy dish that I recently made. Of course, if you want it to be Vegan, just change the ingredients that work for you and I'm sure it will taste as good. It is an easy recipe that you could change and adjust to suit your own tastes. So have fun with it and enjoy!

Don's Vegetarian Mexican Pasta


  • 2 Large Ears Of Corn (cut corn from the cob)
  • 1 Box Rotini Corkscrew pasta
  • 1 – 15 oz can Tomato Sauce
  • 1 – 15 oz can Diced Tomatoes
  • 8 oz Jar of Taco Sauce (more if desired)
  • 2 pkgs Morningstar Burger Crumbles
  • 2 Cups of Grated Sharp Cheddar cheese

  1. Cook pasta as directed on box and set aside.
  2. Combine corn, tomato sauce, diced tomatoes, crumbles and taco sauce into skillet and cook until thoroughly heated.
  3. In a large 9x13 deep glass baking dish (may want to coat with cooking spray), spread half the cooked mixture from step 2 on the bottom of the glass baking dish evenly. Then add the pasta on top of that and spread evenly.
  4. Add the remaining mixture from step 2 on top of the pasta and spread evenly.
  5. Spread the cheese on the top.
  6. Cover the baking dish with foil and bake for 25 minutes at 400 degrees. In the last 5 minutes, remove the tinfoil. Let the dish set for a few minutes before serving.
