Easy Veggies Rice and Cheese Recipe
This is one of my favorite things to make!  It is simple and easy and nutritious.  The raw taste of the veggies just brings it alive.  Outside of cutting up some vegetables and steaming them and the rice, it is not a hard thing to make.  It takes very little time. So, here's what I do with my recipe and you of course can create it in whatever way works for you.

Sometimes I use a veggie chopper to chop the vegetables up, but tonight I just cut them up.  It all depends upon what you have and what you want to do. The veggie chopper really makes cutting vegetables up so easy.  There is no right way or wrong way to do this. 

Cook time for the veggies and rice was around 45 to 50 minutes, but of course that depends upon your steamer.

You can use whatever vegetables you wish to use.  Your favorite veggies are the ones that work the best.  Tonight, I used broccoli,  cauliflower, carrots, green pepper, red pepper, and snow peas.



Directions:

  1. Chop and cut up vegetables in normal serving sizes.  
  2. Place veggies in the steamer and cook according to your steamer instructions (I cooked my vegetables for about 45 to 50 minutes.  It varies based upon what you use and how your steamer operates.
  3. At the same time the veggies are steaming, put your rice in the steamer and cook according to your steamer instructions.   I also added 3 bouillon cubes (tonight I used chicken flavor, but I often use the vegetable flavor).  Again, there are no right or wrong ways to do this.  It is whatever you prefer.  You may want to stir the bouillon cubes into the rice before all the water is cooked out.  If you forget, just stir the rice mixing the cubes in very well.
  4. You could also substitute Quinoa for the rice and that would make it healthier.

Serving:

  1. Place a good helping of rice on the plate.
  2. Add ample amount of the steamed veggies.
  3. Place cheese on top of everything and let set for just a couple of seconds to melt.
  4. I then add some celery salt on top
  5. Enjoy!

The thing I like about it is that the wholesome tastes of the vegetables is allowed to come through in this dish.  Between the rice and veggies, there is usually plenty to eat and if not, just make more!   I hope you enjoy this simple and easy dish just as much as we do!

If you prefer not to use the cheese, this dish should taste just as good.  Feel free to experiment with your favorite foods and combinations!
