Delicious Quinoa And Vegetables

Vegetables and Quinoa

Based upon a friend's recommendation, (Trevor Marty) we tried something that was very delicious tonight for supper. In fact, when we were in the store looking for it, one very helpful lady came up and shared how delicious it was and how much she liked it. She was so kind and gladly pointed us in the product she thought was the best one to buy.


Quinoa is a high protein grain that is delicious and wholesome. It is not hard to prepare and a half cup of it was plenty for two of us. It only took about 15 minutes to prepare and I did not add any flavoring to it. I just added 1 cup of water to the 1/2 cup of Quinoa and followed the directions on the package.

We took several different vegetables and cut them up, placed them in a frying skillet and cooked them in coconut oil. We used broccoli, asparagus, carrots, green pepper, yellow squash, and celery. Again, I did not add any flavoring or salt or anything. The only addition was the coconut oil.  Coconut oil is much better for you than butter, despite being high in saturated fat.


Coconut oil helps support the immune system as a natural antibiotic, optimize body weight, shown to help prevent Type II diabetes, and good for the heart.  It is a good source of medium chain fatty acids (also called medium chain triglycerides)  as opposed to long chain fatty acids.  Due to the fact that they are smaller fatty acid chains, they are easier to digest and the liver can burn them as energy more quickly.  It has been shown to help in the treatment of Alzheimer's.  For more information on coconut oil, click this link.

This tasted so good and it was quite filling for two people. Sometimes I eat stuff that makes me physically feel lethargic and challenged, but this food tonight felt so good to eat. The taste was delicious and superb. I'm not a vegetarian but we keep finding dishes that are vegetarian that we love.  Slowly we keep replacing our old diet with these newly discovered foods.

We will definitely have this again and I may find some other ways to fix a meal with Quinoa. I can't believe how easy it was to prepare and how little time it took to fix. The total cost of the meal was not expensive either, but I know we got some excellent nutrition this evening.

  1. It's funny you posted this now, Don... I just found quinoa at my local grocer this weekend (although I've seen it floating around on food blogs for quite a while now) and I've been wanting to try it. I'll have to cook some up and see what I think of it. Thanks for sharing...

    1. We love it! I haven't seen it in a regular grocery store yet but I'm on the look out for it! It is so easy to prepare and now I've got to see if I can come up with some nice dishes with it.
